Bibimbap Burger

Vegans, rejoice!! Beyond Burgers are FINALLY here in Korea! After trying the Beyond Burger abroad in Hong Kong and the USA, I’ve been patiently waiting for the product to make it’s way to Korea. When I got the news that it was being released here, I immediately put in my order to Coupang (an online shopping center in Korea).

Beyond Burgers in Korea!

When waiting for my burgers to arrive, I thought about how I wanted to cook them. As I had already tried Beyond Burgers, I wanted to do something a little different with them rather than just eating them “American” style with ketchup and mustard. Being that I live in Korea, I thought to myself “Why not put a Korean twist on it?”, and that’s how the bibimbap (비빔밥) burger was born!

Ingredients

Not to toot my own horn, but I can honestly say this is one of the best burgers I’ve eaten in my entire life. The Beyond Burger itself is brilliant. Juicy, smokey, and tender as a burger should be, and the toppings I chose for the burger ended up being a perfect compliment to it. The ssamjang (쌈장) mayo and kimchi (김지) added a nice spicy zip to the burger, while the carrot and cucumber brought in the crunch factor! So, if you’re a fan of Korean food, but also just want a damn hamburger…this recipe is for you!

2. Vegan Kimchi (Jongga Brand 종가집)- Bought at a local supermarket
3. Soy Mayo (Ottogi Brand 오뚜기)- Bought at the vegan market: Vegan Space
4. Vegan Hamburger Buns (Earth Tree Brand)- Ordered online through Coupang
5. Ssamjang Sauce (쌈장)- Ssamjang is accidentally vegan and can be purchased at most markets!

Recipe Notes

1. For the ssamjang mayo, make it according to your own taste. I like spicy food so I mixed roughly equal parts of the ssamjang and of the mayo. If you don’t care for too much spice, add more mayo than ssamjang. Make it your own!
2. I like my kimchi warm, and I especially wanted it warm in this recipe since I already had so many cold vegetables with the carrot, cucumber, lettuce, and perilla leaves. I recommend heating it in a pan, but having it cold is also okay.
3. If you’ve never cooked a Beyond Burger before, be careful not to burn them! The instructions say to cook each side for only 3 minutes. I tend to cook mine a little longer, but I watch them very carefully. The inside of the patty will still appear pink when it’s fully cooked, and that’s how it should be.

Ingredients
  

  • 1 Beyond Burger
  • 1 Vegan Hamburger Bun
  • 2 tbsp Ssamjang Mayo (1 tbsp vegan mayo/ 1 tbsp ssamjang) Adjust the ratio to taste
  • 1/2 small Carrot (julienned)
  • 1/2 small Cucumber (julienned)
  • 2 Fresh Perilla Leaves
  • 1 Leaf of Lettuce
  • 2 tbsp Vegan Kimchi Adjust amount to taste
  • Sesame Seeds Optional

Instructions
 

  • Prepare your vegetables: 
    -Rinse, peel, and julienne your carrot. Set Aside.
    -Rinse and julienne your cucumber. Set Aside.
    -Rinse the perilla leaves and lettuce. Set Aside. 
  • Make the Ssamjang Mayo: 
    – Mix roughly 1 tbsp of Vegan Mayo with 1 tbsp of Ssamjang. If this is too spicy, add more mayo.  If you like a lot of sauce on your burger, increase the measurements! Make it your own. 
  • Cook the Beyond Burger according to the package. While the burger is cooking, I recommend lightly toasting your hamburger bun in the oven. 
  • When the burger is finished cooking, I recommend putting the kimchi on the stove in the same pan that the burger was in. That way, you get the extra flavor from the burger in your kimchi, too. Heat the kimchi on the stove for roughly 3 minutes, stirring often. 
  • Now it’s time to assemble the burger:
    – Spread the Ssamjang Mayo on both the top and bottom bun.
    – On the bottom bun, layer the ingredients in order as follows: carrot, cucumber, perilla leaves, lettuce, burger, kimchi, sesame seeds (optional), top bun. Serve immediately.
